Chicken Roast Recipe is a finger-licking a semi-dry chicken curry. The chicken that is marinated with spices & cooked in a well-balanced masala. A great side dish for Indian Breads, Appam, Dosa, and Pathiri.
The spicy Chicken roast recipe which I have prepared is with minimal ingredients. The main ingredients to prepare this dish is fried onions, curd, and Indian spice powders. Here, I am preparing it from scratch by frying the onions and making a paste out of it by adding spice powders. Usually, I am cooking the chicken covered and without adding water.

Spicy Chicken Roast Recipe

Ingredients
500 grams Chicken
2 medium size Onion Sliced
100 ml Oil to fry onions
1 tablespoon Chili Powder
½ teaspoon Turmeric Powder
1 tablespoon Garam Masala
1 tablespoon Black Pepper Powder
1 tablespoon Kashmiri Chili Powder
Salt as Required
2 tablespoon Curd
1 tablespoon Ginger Garlic Paste
2 stalks Curry leaves
Chopped Coriander leaves
Directions
- Heat the oil in pan and deep fry the chopped onions until they turn golden brown.
- In a mixer jar, add the fried onions and remaining ingredients and make a paste without adding water.
- Now, combine the chicken with the prepared paste and add 2 tablespoon oil which is used for deep frying.
- Marinate the chicken at least for an hour or more.
- Now heat a pan with 2 tablespoon oil, and add the marinated chicken and cook on medium flame.
- Cook stirring frequently until the chicken pieces begin to roast and add curry leaves.
- You don’t have to add any water, the meat will let out water as it cooks. This will take about 20-25 mins.
- Finally, add coriander leaves and cook for a minute and remove from flame.
- Serve the spicy Kerala chicken roast with any Indian breads or rice.
