Mutton Ghee Roast is a simple, easy, and delicious finger-licking recipe that has its origin from Mangalore. Here I have prepared this recipe in a semi gravy style you can make it dry roast. If you don’t have whole spices you can add spices powder.

Ingredients

  • To Cook Mutton
  • 500 g Mutton (Goat or Lamb)

  • 1 tablespoon Ghee / Clarified Butter

  • 1 tablespoon Ginger Garlic Paste

  • ½ teaspoon Turmeric powder

  • Water

  • To Dry Roast the Masala
  • 6 nos Kashmiri Chilies

  • 1 tablespoon Coriander Seeds

  • 1 tablespoon Cumin Seeds

  • 1 tablespoon Fennel Seeds

  • 1 tablespoon Pepper Corns

  • 6-7 nos Dry red chilies

  • 1 nos Cinnamon Stick

  • 4 nos Cloves

  • To Grind Masala
  • 1 inch Ginger

  • 5 Cloves of Garlic

  • To make Mutton Ghee Roast
  • 1 tablespoon Ghee / Clarified butter

  • 2 tablespoon Yogurt / Curd

  • Curry Leaves for Garnishing

  • Salt to taste

Directions

  • In a pressure cooker melt ghee, add ginger garlic paste, and turmeric powder. Mix well and then add the mutton pieces and saute in the ghee for a few minutes. Then add some water just to cover the mutton pieces. Cook for 8 whistles on medium heat or until the meat is soft and tender.
  • To make Masala for Mutton Ghee roast, Dry roast Kashmiri chilies, Kashmiri Chilies gives a nice color to the recipe and they are less spicy. After roasting for 1 minute transfer this to a plate and then roast the other spices dry red chilies, Coriander seeds, Cumin seeds, Fennel seeds, Cinnamon, Cloves, and Peppercorns and roast it for some time and be careful not to get them burnt.
  • Transfer all the roasted spices to a blender and along with this add a piece of Ginger and Garlic. Without adding water grind well.
  • To make mutton Ghee roast melt some ghee in a pan and add the ground masala and also add curd to it and mix this well with the ghee. Add the broth and mutton pieces which we have cooked initially and mixed well with the masalas. Add some salt as required. We need to cook this until the gravy thickens and reduces.

  • The gravy is thick and absorbed by the Mutton. Mutton is coated well with the masala and finally, add some curry leaves for garnishing and turn off the heat.

Notes

  • Adjust the spice level according to your taste. You can increase or decrease the number of red chilies.
  • Ghee is a must for this recipe and if you want to store the masala, store it in an airtight container. Add Ginger Garlic before cooking.
