Beef Ularthiyathu

Beef Ularthiyathu recipe is a quick, simple, yet delicious way of making Beef Roast. This beef is beautifully and slowly roasted in a Spicy Aromatic Masala with Curry leaves and Coconut pieces (this is optional). This Kerala Beef Fry recipe is very popular in our home and is best served with Parotta.

Always beef should be cooked well for a better taste. If beef is not cooked properly it becomes chewy and difficult to eat. So always cook the beef till it is soft. Beef color will change to dark once cooked with spices.

For meat masala, Green Cardamom, Fennel Seeds, Cloves, Cumin Seeds, Cinnamon Stick, Coriander seeds for about 1 tablespoon and 8 nos Dry Red Chilis. In a small pan on medium-low heat, add all of the spices. Roast the spices just until warm and you can smell the aroma of the spices. Once the spices cool down, add the spices to a small spice grinder or blender. Grind until a slightly coarse powder forms. Store in an air-tight container.

Kerala Beef Ulathiyathu is a South Indian Dish

Ingredients

  • 1-kilogram Beef

  • 2 tablespoon Coconut Oil

  • 20 grams Shallots chopped

  • 1 head Garlic Cloves sliced

  • 3 sprig Curry Leaves

  • 2 medium-sized Onion Sliced

  • Salt as required

  • 1 tablespoon Meat Masala

  • 2 tablespoon Coriander Powder

  • ½ teaspoon Mustard seeds

  • 3 Green chili sliced

  • ½ tablespoon Fennel Seeds

  • 1 tablespoon Red Chili Powder

  • 1 tablespoon Kashmiri chili powder

  • ¼ tablespoon Turmeric Powder

  • 1 tablespoon vinegar or lime juice

  • 1 tablespoon Ginger garlic paste

Directions

  • Clean and wash the meat and add 1 tablespoon of Coriander powder, pepper powder, required salt, red chili powder, meat masala, turmeric powder, vinegar/lemon juice, and ginger garlic paste The vinegar or lime juice makes the meat soft.
  • Mix everything together and cover and refrigerate for at least an hour.
  • Once the beef is marinated, pressure cooks the beef on high for 10 minutes (about 4 whistles). Here I am adding little water so that there will be excess stock which is optional. Once cooked keep aside.
  • In a wide/deep pan (or uruli) on medium-high heat, add the coconut oil. Once the oil is hot, add in the mustard seeds and fennel seeds allow it to splutter
  • Add the ginger, garlic, and curry leaves. \Saute until lightly golden
  • Add the shallots and saute for few seconds.
  • Add the onions and saute till it becomes translucent.
  • Add coriander powder, meat masala, Kashmiri chili powder, Pepper powder.
  • And mix well till the spices get roasted and fragrant on a medium flame.
  • Now add the cooked beef with the stock and mix well. Allow the stock to reduce and cook till dry.
  • Garnish with curry leaves and remove from flame.
  • Tasty Beef Ularthiyathu is ready to serve with rice, Parotta, etc.
